夹层锅简介
夹层锅又名蒸汽锅、蒸煮锅、炒锅,夹层蒸汽锅。夹层锅是杀菌锅常用的配套设备,常用于杀菌前食品的预煮加工处理,他通常由锅体和支脚组成。锅体是由内外球形锅体组成的双层结构形式,中间夹层通入蒸汽加热。有固定式、可倾式、搅拌式等样式。
夹层锅具有受热面积大、热效率高、加热均匀、液料沸腾时间短、加热温度容易控制、外型美观、安装容易、操作方便、安全可靠等特点。
夹层锅广泛应用于各类食品的加工,也可用于大型餐厅或食堂熬汤、烧菜、炖肉、熬粥等,是食品加工提高质量、缩短时间、改善劳动条件的良好设备。

Introduction to Jacketed kettle:
Jacketed kettle also known as steam pot, cooking pot, sandwich steam pot. It usually consists of a pot body and a supporting foot. The boiler body is a double-layer structure composed of inner and outer spherical boiler body, and the middle interlayer is heated by steam. There are fixed, tilting, stirring and other styles.
Jacketed kettle has the characteristics of large heating area, high thermal efficiency, uniform heating, short boiling time of liquid material, easy control of heating temperature, beautiful appearance, easy installation, convenient operation, safe and reliable, and so on.
Jacketed kettle is widely used in various kinds of food processing, also can be used in large-scale restaurants or canteens to boil soup, cook vegetables, stew, porridge, etc. It is a good equipment for food processing to improve quality, shorten time and improve working conditions.
夹层锅分类
1、按结构形式分为:可倾式夹层锅、立式(固定)夹层锅结构
2、按加热方式分为:电加热夹层锅、蒸汽夹层锅,燃气夹层锅
3、按工艺需要各采用带搅拌或不带搅拌设备。
4、按自动化程度可分为手动倒料夹层锅和自动倒料夹层锅。

夹层锅技术性能
1、容积:50L、100L、200L、300L、400L、500L、600L、800L、1000L。
2、结构形式:分可倾式、立式结构,按工艺需要采用带搅拌与不带搅拌。
3、锅体材质:①内锅体不锈钢(SUS304),夹套、支架碳钢(Q235—B)外涂防锈漆;②内外全不锈钢。
4、带搅拌装置锅体:顶部中心搅拌,减速机输出轴与搅拌桨轴采用活套连接,方便拆装与清洗。
5、搅拌转速:36r/min(可以根据客户要求来选定一定的转速);搅拌桨形式:普通搅拌(锚式)和刮底搅拌。
6、支脚形式:①立式锅体:三棱锥形式、圆管式;②可倾式锅体:槽形支架式。
7、设备配置:表盘指针式温度计、蒸汽进口、出料口等(立式结构)。
8、可倾式夹层锅体最大可倾转90°,倾转方式为手动式翻转。
注:夹套工作压力、电机功率、加热功率、搅拌浆结构等可根据客户特殊要求定做。
夹层锅安全管理制
1 、使用蒸气压力,不得长时间超过定额工作压力。
2、进汽时应缓慢开启进汽阀,直到需用压力为止,冷凝水出口处的截止阀,如装有疏水器,应始终将阀门打开;如无疏水器,则先将阀门打开直到有蒸气溢出时再将阀门关小,开启程度保持在有少量水汽溢出为止。
3、 对安全阀,可根据用户自己使用蒸气的压力,自行调整。
4、 蒸气锅在使用过程中,应经常注意蒸气压力的变化,用进汽阀适时调整。
5、停止进气后,应将锅底的直嘴旋塞开启,放完余水。
6 、可倾式和搅拌式夹层锅,每班使用前,应在各转动部位加油;搅拌式夹层锅锅体面上的部件,建议采用熟菜油;其它各处均采用30#–40#机械油。
Safety Management system of Jacketed kettle

1, the use of steam pressure, must not exceed the fixed working pressure for a long time.
2, the intake valve shall be opened slowly until the pressure is required, and the stop valve at the condensate outlet, if fitted with a water trap, shall always be opened; If there is no drain, open the valve until there is a steam overflow and then close the valve to a small extent until there is a small amount of water vapor overflow.
3, the safety valve, according to the user’s own use of steam pressure, self-adjustment.
4, steam pot in use, should always pay attention to the change of steam pressure, the use of steam valve timely adjustment.
After stopping the air intake, open the straight-mouth cock on the bottom of the pot and drain the remaining water.
6, tilting and mixìng Jacketed kettles, before each shift, should be filled in the various rotating parts; mixìng Jacketed kettle on the decent parts, recommended use of cooked vegetable oil; other uses of 30% / 40 # mechanical oil.
夹层锅维护保养
1、进汽管和杀菌釜管接头漏汽,当选紧螺帽不解决问题时,应添加或更换填料。
2、压力表和安全阀应定期检查,如有故障及时调换和修理。
3、减速箱开始使用50小时后,应拆下来放掉杀菌釜油,用煤油或柴油冲洗,加入30#–40#干净机油,使用150小时后,第二次换油,以后可视具体情况,每使用到1000小时左右换油一次。
4、防锈油剥落,应及时涂刷,涂外锅的油漆,建议采用X55-3铝粉乙烯耐水漆。
5、本锅使用5年后,建议进行安全性水压试验,以杀菌釜行水压试验的间隔时间,按各地技术部门的要求进行。
水压试验的压力P水按下列情况决定:
当额定工作气压P额<0.6MPa时,P水=0.15MPa;
当额定工作气压P额=0.6-0.8MPa时,
P水=P额+0.3MPa
6、本锅外层锅体使用4.0~5.5毫米厚的钢板制造,钢号A3,当外锅经多年锈蚀减薄到2mm以下时,应停止使用。
7、本锅不锈钢的焊接和不锈钢其它钢材连接处的焊接,应采用不锈钢焊条奥102、奥107、奥132、奥137,不宜采用其它牌号。
Jacketed kettle maintenance
1, steam intake pipe and outlet pipe joint leakage, when the tight nut does not solve the problem, should be added or replaced.
2. Pressure gauges and safety valves should be checked regularly and replaced and repaired in case of failure.
3. After the deceleration tank has been in use for 50 hours, it should be removed and released, flushed with kerosene or diesel oil, 30 / 40 # clean oil added, and after 150 hours used, the oil should be changed for the second time, depending on the specific situation in the future. Change oil every 1000 hours or so.
4, anti-rust oil spalling, should be brushed in time, paint outside the pot, recommended X55 3 aluminum powder ethylene water-resistant paint.
5. After using this pot for 5 years, it is recommended to carry out safety water pressure test, and the interval of water pressure test will be carried out according to the request of local technical department.
The pressure P-water of the hydraulic test is determined according to the following conditions:
When the rated working pressure P is less than 0.6MPa, P water is 0.15 MPA;
When the rated working pressure P = 0.6-0.8MPa,
P Water = P frontal 0.3MPa
6. The outer body of this pot is made of steel plate of 4.0mm / 5.5mm thick, steel number A3. When the outer pan is corroded and thinned to below 2mm for many years, it should be stopped.
7, stainless steel welding in this pot and other stainless steel joints, should adopt stainless steel welding rod O 102, O 107, O 132, O 137, not suitable for other brands.
